Place eggs and butter in saucepan. Turn on low heat. Stir constantly with spatula.
2 eggs, 15 g unsalted butter
When eggs start to thicken, add ground black pepper, salt, chives and creme fraiche. When eggs look like thick custard, turn off heat. Plate and serve immediately.
